Glittery Cookies

Every morning, and I mean every morning, my daughter asks me to put on “Glittery”. It’s her favorite Christmas song by Kacey Musgraves. Every Christmas, I put on the Kacey Musgraves Christmas Show, and this year it clicked for my daughter. She was like “This one” when Glittery came on. 

I’m so in love with this age Coco is at. Her life and interests inspires me constantly. I thought how fun would glittery cookies be to embrace her favorite song? 

For the cookie, I use my favorite soft sugar cookie recipe, inspired by the store bought weirdly soft cookies covered with frosting and sprinkles. I use melted Enjoy Life white chocolate for the frosting, and dust on some glittery silver.

You make me feel so glitteryyyyyyy

Ingredients:

2 ¼ cups cake flour

¼ cup unsweetened applesauce 

¼ cup aquafaba

½ cup white sugar 

½ cup powdered sugar

½ vegan butter

⅓ cup vegetable shortening

1 tbsp vanilla extract 

2 tsp baking powder

¼ tsp salt 

1 bag Enjoy Life White Chocolate Chips

Silver Glitter 

  1. In a medium bowl, whisk together flour and baking powder. 

  2. Using a stand mixer, cream the butter using a paddle attachment. Add shortening and cream together until combined.

  3. Add white sugar to butter and mix for one minute. Next, add powdered sugar and blend until incorporated. 

  4. Add aquafaba and applesauce next, and mix until creamy, making sure to scrape the sides of the bowl every now and then.

  5. Add in vanilla extract.

  6. Sprinkle in cake flour and salt. Switch to a rubber spatula and gently fold into wet ingredients until cookie dough forms.

  7. Cover bowl tightly with plastic wrap and place in refrigerator for one hour before baking.

  8. Preheat oven to 350 degrees. Line two baking sheets with parchment paper. Scoop 1.5 tbsp of cookie dough for each cookie, with 3 inches apart. 

  9. Bake cookies for 10 minutes, until sides are just golden. Remove from oven and allow to cool on pan. 

  10. Melt white chocolate chips and stir until creamy. 

  11. Using an offset spatula, frost each cookie. Sprinkle silver dust on top before white chocolate hardens!
